The following command creates a new project (-n) without launching the GUI (-c) using images from the IMAGE_DIR directory.
pix4dmapper -c -n --image-dir ./IMAGE_DIR PROJECT_NAME.p4d
It is then possible to run all three steps of processing (-r)
pix4dmapper -r -c PROJECT_NAME.p4d
